Basic Waffles recipe: light, crisp waffles from a twenty-year-old card
A basic waffle recipe from a printed card that has lived in a kitchen drawer for twenty years. Stiff egg whites folded in last make them light and crisp. Makes 4, about 5 minutes each.

This waffle recipe has been folded in a kitchen drawer for twenty years: creased, stained, one spill away from gone. It is a printed strip from a recipe kitchen, not a family heirloom in anyone's handwriting, and that is why it survived. Nobody wrote it down anywhere else, because the card was always there.

Why these waffles work
The card asks you to separate the eggs, beat the whites until stiff and fold them in at the end. That one step is the difference between a waffle and a pancake with a grid on it. The whites hold air the batter would otherwise lose, so the inside stays light while the outside crisps. Everything else is ordinary: flour, milk, a little sugar, a lot of baking powder and melted butter. The card says to let the butter cool before it goes in, so it does not cook the yolks on contact.
The card has you pour batter onto the grill before it tells you to stir in the butter and fold in the whites. Read it as a list of things to do, not a strict sequence: finish the batter, then pour. We have kept the steps as the card gives them, because that is what was scanned.
Notes from the drawer
- Four tablespoons of butter is half a stick. The card allows butter flavored shortening instead. Use butter.
- Two and a half teaspoons of baking powder is a lot for one cup of flour, and it is why the sodium below is high. It is also why the waffles rise. Do not reduce it on the first go.
- Pour less than you think. “Within one inch of the edge” means the batter has room to spread when the lid comes down.
- Five minutes is a guide. Stop when the steam stops.
The card was photographed once, and the recipe scanner in Forktales turned it into the list and the steps below. The paper went back in the drawer.
